Celtic Corner
Anyone who's visited my web site, blog, or MySpace page
knows my heart bleeds tartan. So how about we kick off the Celtic Corner
with the national emblem of Scotland, the thistle!
History
The Scottish cotton thistle (Onopordum acanthium)
has been one of the national emblems of Scotland since the 13th-century
reign of
Alexander III. Legend has it that a hapless member of an invading army
stepped on this thorny devil of a plant, and his yelp of pain alerted the
Scots of the danger.
James III
had the thistle struck on silver coins in the 15th century.
Uses
Reportedly has been used to treat cancers and ulcers, and
to dry up mucous membranes. Seed receptacle was once eaten and reportedly
tastes similar to an artichoke. The soft hairs on the stem were used to
stuff pillows, and oil expressed from the seeds were used for burning and
cooking.
In North America it is considered an invasive species. IOW,
if you live in Ohio and you see one, squirt it with RoundUp. :) |
Carolan's Cauldron: Beltane Recipes
Champagne Punch For Two 1 cup chilled passionfruit nectar 1/2 tsp Angostura bitters 1 cup chilled champagne or other sparkling white wine 4 fresh raspberries or strawberries 1 orange slice, cut in half
Divide nectar and bitters between two champagne glasses. Add champagne. Drop two berries in each glass. Garnish with orange slices. Serves two.
Note: Non-alcoholic champagne or sparkling juice can be substituted for the champagne. ~ ~ ~ May Wine 1 bottle white wine 1/2 cup fresh strawberries, sliced 12 sprigs fresh woodruff
Pour wine into wide-mouth jar or bottle. Add berries and woodruff and let sit for an hour or two. Strain and serve chilled. Garnish with an orange slice. ~ ~ ~ Candied Violets 1 egg white Granulated sugar Violets
Wash
violets quickly in cool water and allow to drip dry. Whip egg white until
frothy, but doesn't peak. Dip each violet in egg white and roll in flowers
to coat evenly, but not too heavily. Lay on waxed paper to dry at least 1
day. May be stored for several months in air-tight container, separated
with wax paper.

My editor is breathing down my neck, and come hell or high water the manuscript for the sequel to Beaudry's Ghost, working title Dark of Light, will be in her hands in June.
